1/2 cup quinoa
1 1/4 cup water
2 Tablespoons Butter
3/4 cup fresh salsa (recipe follows)
Sea Salt to taste
Bring water to a boil. Add quinoa and reduce heat to medium for about 12 minutes or until all water is absorbed by the quinoa. Stir in butter and salsa. Top with sea salt to taste. Makes 2 cups.
Fresh Salsa
1/4 cup fresh cilantro, chopped
1/4cup diced onion
1/4 cup diced green chilies (I use jalapeno)
2 fresh tomatoes, diced
2 teaspoons fresh squeezed lime juice
fresh ground pepper to taste
Mix all ingredients together. Makes about 1 1/2 cups salsa.
